got my hands on one.

what are some things i can look for while watching the real time numbers? anything of interest?

im most interested in engine temp and the like.

any tips or things to look for woud be great

Fuel trims, trans temps if auto and you have enhanced parameters, knock, ignition advance, intake air temp, mass airflow. You can see a lot, you can also see what changes with different operating conditions, and throttle position.

Mines limited. I looked at IAT when I did the opening up of the area in front o the filter. That gave me some airflow input.
I look at timing alot during different driving conditions.
Fuel Trims are a bit of a black hole for me right now as is O2 readings. But Im learning about those a bit.
MAF I still havent lookd into much.
TPS is mainly just to see if there are any bad spots on the sensor.
MAP I havent yet to read much on.
